Quinoa Vegetarian Meatballs

  • 1/2 cup Mama Nature Superfoods quinoa – rinsed
  • 1/3 cup lentils
  • 1/2 cup minced onion
  • 2 cloves garlic minced
  • 1/4 cup Parmesan cheese
  • 2 tsp Italian seasoning
  • 1/2 cup Italian bread crumbs
  • 1 tsp sea salt
  • 1 egg
  • 3 tbsp olive oil

Add Quinoa, Water and a pinch of salt to pot, bring to a boil and simmer on low heat until the quinoa has become tender, around 15 minutes. Let quinoa rest and press out any excess liquid with a towel. In separate pot add lentils &  water and bring to a boil – cover pot with tight fitting lid and turn heat to low. Simmer for about 15-20 minutes or until they are tender, drain excess liquid. In separate pan sauté onions and garlic with 1tbsp of olive oil until softened. Add quinoa, lentils, onion & garlic mixture, and remaining ingredients In a large bowl (reserve remaining olive oil). Using hands lightly toss ingredients to combine. Measure out golf ball sized meatballs and add to a hot pan warmed with the remaining 2 tablespoons of olive oil, cook until browned on all edges. Add to salad or serve with marinara sauce.
