Quinoa Sushi Roll – serves 2
To prepare Quinoa – “Sushi” style:
- 1 cup quinoa, rinsed
- 2 cups water
- 1/4 Tsp Salt
- 1 Tbsp Rice Wine Vinegar
- 1Tbsp Sugar
For Sushi:
- 4 – sheets Nori
- 1/2 lb Tuna – Sushi Grade
- 1 Cucumber
- 1 Avocado
Optional:
- Wasabi, Soy Sauce.
To Prepare The Quinoa:
Add Quinoa, Water and salt to pot, bring to a boil and simmer on low until the quinoa has become tender, around 15 minutes, Move quinoa to non-metallic bowl. In separate bowl mix together sugar and rice wine vinegar until the sugar is dissolved. Fold in rice wine vinegar and sugar mix evenly into the quinoa until evenly distributed.
To prepare sushi:
Thinly slice ripe avocado, Sushi Grade tuna and cucumbers, set aside. Place Nori on sushi roller and then add about 1/2 to 2/3 cup of quinoa in the center of the roll. lightly spread quinoa until it is an even layer on the nori. Place a line of tuna, cucumber and avocado along the quinoa. roll and cut into 1 1/2 inch thick pieces. Serve with wasabi and soy sauce.
